What is umami? Your mouth already knows

A Japanese chemist identified the savory flavor "umami" as distinct from salty, sweet, sour, and bitter tastes more than a hundred years ago. That scientist's portrait now hangs on the wall at Umami Burger , a restaurant in Greenwich Village named for this fifth taste with a menu offering only dishes showing it off.
